Pear Salad with Balsamic Vinaigrette
Dressing Ingredients:
⅓ cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon minced garlic
Salt and pepper to taste
Salad Ingredients:
½ small red or sweet onion, very thinly sliced
5 oz arugula - about 5 cups
3 pears
About 4 oz goat cheese
1 cup or so dried cranberries, apricots, cherries or your favorite dried fruit
3/4 cup nuts, toasted if you like (optional - sunflower or pumpkin seeds can be used as well)
Instructions
Whisk dressing ingredients. Put arugula in salad bowl. Top with pears and onions. Sprinkle on goat cheese, cranberries, and nuts. Drizzle dressing over salad just before serving. Don’t toss it. As you dig in, dressing will distribute through the salad.
